Spaghetti with garlic, oil and tomato

Ingredients (for 4)

12oz (350g) Montignac very low GI spaghetti

8 peeled garlic cloves

8 tbsp (120ml) olive oil

3 tbsp tomato paste

2 glasses water

4 chili peppers (mild to hot)

Chopped parsley

Salt

 

 

1.     Brown the peeled garlic cloves whole in a skillet with the oil and minced peppers.

 

2.     Dilute the tomato paste with the water, pour it into the hot oil and immediately cover with a lid.

 

3.     Lower the heat and let it simmer for about 5 minutes, salting to taste.

 

4.     Throw the spaghetti into plenty of boiling salted water, cook until al dente and drain.

 

5.     Put the spaghetti in the pan with the sauce, mix thoroughly, add the chopped parsley and serve.
